Menu Plans

Wow, this week started off with a bang! We had the whole family over for Easter Dinner. It was really yummy! I have a lot planned for this week. I am finding that keeping up with the kitchen and cooking big meals is not nearly the chore I used to think it was. Although, I would imagine I spend at least two hours in the kitchen just cleaning everyday (not counting the cooking) – sometimes more. However, I find quite a bit of joy cooking for my family. Not to mention… how much I love to eat!

Breakfast

S – Leftover Rice and Beans with Sourdough Toast (The beans and rice were actually sent home with me from a church member after potluck on Sabbath.)
M – Toast with Milk Egg Gravy
T – Strawberry Parfaits, Homemade Granola
W – Buttermilk Biscuits with TVP Sausage Patties, Fruit
TH – Breakfast Casserole, Fruit, Cereal or Homemade Granola w/ Soymilk
F – Oatmeal with Soymilk, dried fruit and walnuts
S – Cereal, Homemade Granola, Soymilk, Yogurt

Lunch

S – None (We had a late breakfast/ early supper.)
M- Tossed Salad, Egg Salad Sandwiches on Toasted Bread
T- Tossed Salad with Cheese, Eggs, and Green Onion
W- Chickpea Salad Sandwiches on Toasted Sweet Sourdough Bread
TH- Hot Dogs, Chips, Macaroni and Cheese
F – Peanut Butter and Jelly Sandwiches, Cream Cheese and Jelly Sandwiches, Grapefruit
S – Tacos

Supper

S – BBQ Big Franks w/ Homemade 40 Minute Buns, Grilled Onions, Potato Salad, Coleslaw, Onion Rings with Blooming Onion Dip, Hush Puppies with Tartar Sauce, Soy Lima Beans, Homemade Pickles, Deviled Eggs
MVegetable Steaks and Onions, Gravy, Potato Salad, Collard Greens, Cornbread, Strawberries and Cream
T- Cream of Leek Soup, Deviled Eggs, Toast
W – Vegetable Bean Soup with Vegetarian “Meatballs”, Grilled Cheese Sandwiches
TH – Chili, Cornbread, Roasted Fingerling Potatoes Onions, and Carrots
F – Cheese Enchiladas, Salad, Re-fried Pinto Beans, Rice, Guacamole
S – Leftovers

Baking

S40 Minute Hamburger Buns, Feed Amish Friendship Bread Starter, Feed Sweet Sourdough Starter
M – Mix up Sweet Sourdough Bread and Set to Rise
T – Second Rise and Bake Bread
WMake Cultured Buttermilk , Bread Pudding
TH – Bake Sourdough Orange Cranberry Bread, Sourdough Pancakes to freeze, Sourdough Lemon Poppy seed Bread
F – Old Fashioned White Cake with Strawberry Filling
